BAM!




This recipe comes courtesy of Emeril. Mediterranean Chicken Packets. Sounds tasty, no?

All you do is make little pockets out of aluminum foil, put some spinach in them, lay the chicken breast on top, and then cover with a mix of tomatoes, olives, feta cheese, thyme, basil, onion, garlic, salt, pepper, and white wine. Then you seal the pockets up, put them in a 500 degree oven, and 15 minutes later, they are done! Yum! Too bad it is four hours later and I am hungry again - ha!

Mmmmm, Pasta Norma

So, tonight I took my recipe from the pages of Family Circle. Lame, I know. No, I did not buy the magazine, that would be too sad. This comes from their recipes online.
Includes:
(1) 12 oz. package of Tri-Color Rotini
3 tbs EVOO
1 Eggplant, cut into cubes
1/2 an onion, chopped
3 cloves of garlic, chopped
1 can of diced tomatoes w/ juice (I used the kind that also included oregano & basil)
1 bunch of basil, torn to pieces
1 tbs fresh oregano, chopped (I just used the ground oregano we had in the cupboard)
3 tbs snipped chives (I thought this was too fancy, so I omitted it)
6 tbs part-skim Ricotta Cheese (yum!)
dash of salt, pepper, and red pepper flakes

Basically, you just boil the noodles, and through all the other shit in a pan, (sans the cheese and the basil), to cook while the pasta is cooking. Once they are done, you mix the pasta, sauce, and basil together, and then top with "dollops" of ricotta. Viola!

Ay, ay, ay, ay



Tonight was taco night! Hells yeah! While tasty, it was surprising loaded with sodium and fat, go figure! Here's how it works:

1 lb. of ground turkey
1 packet Old El Paso Low Sodium Taco Seasoning
1 can of Fat Free Old El Paso Refried Beans
Handful of Romaine lettuce
Sprinkling of Meijer Gold Medium Salsa Verde
Healthy dose of shredded cheddar cheese
2-3 tortillas

Could this meal be made "healthy?" Well, of course. But my addiction to cheese undermined any attempts at healthiness.

Hungry, hungry



After work I decided to gorge myself on the following treats...

The abortion above featuring tri-color rotini, left over chicken from my gourmet meal on Saturday, (details to follow), a dash of garlic powder, pepper, and salt, and a healthy blanket of shredded cheddar cheese.
Yumminess = 10, Healthiness = -10

And, for dessert, a new twist on an old fave...a chocolate-banana smoothie. I am upping the ante! This may not look especially yummy, and it probably looks and sounds pretty fat, but I jazzed up a recipe from hungry girl, and here's how it goes: (1) banana, (1) packet of Swiss Miss Sensible Sweets Diet Cocoa, (11) ice cubes, 1/4 cup of Stonybrook Farms Low Fat Vanilla Yogurt, and a splash of 1/2% milk. Lessons learned: The milk was not necessary, since the banana was not frozen, it liquified in the blender, which is why I needed all the ice cubes. In the future, I am considering fat free yogurt, dig?




Hungry Girl Egg Rolls







Do you have a timer on your oven? Consider yourself lucky. I have to use the same kind of timer the girls use to time their goddamn bathroom breaks.

These are surprisingly tasty. She uses some fancy ingredients and shrimp, but mine are pretty plain. I just use coleslaw mix, bean sprouts, salt, pepper, soy sauce, and garlic salt. I know the concoction looks pretty wormy, but it's actually pretty good. The egg rolls come out crunchier than various egg rolls I have loved, but they are a nice alternative.

Raspberry Blackberry Smoothie

This is perhaps one of the most beautiful colors I have ever seen. It was very delicious and ate like a meal.

Ingredients:

1 cup frozen raspberries

1 cup frozen blackberries

1/4 cup Dannon Light 'n Fit vanilla yogurt

1/4 Silk light vanilla soy milk


3 oz. Minute Maid light lemonade


Holy fuck this shit was good.
